We did not set out to start a food company. We set out to answer a question that would not leave us alone. Why does a fruit that people trusted for three thousand years not exist in our grocery store, while an entire aisle is devoted to a candy invented last year? The more we looked, the worse it got. The most remarkable ingredients on earth were not gone. They had simply been filed under forgotten.

So we started collecting them. It began at our kitchen table, in a home that slowly filled with jars nobody could pronounce. Then friends kept asking where to buy the sour green thing we would not shut up about. There was nowhere to send them. That absence became the whole idea. If the store would not carry the past, we would recover it ourselves, one obsessive jar at a time, and we would tell the truth about every single one.

That is our promise. We will never oversell. We will say naturally rich in and traditionally used for, and we will mean exactly that and nothing more. We will make the sour things sour and the strange things strange, because the strangeness is the point. This is a recovery mission, not a wellness brand. You are not a customer. You are one of the Remembered. Thank you for going back with us.
