Gluten-Free Ancient Grains: Sorghum and Amaranth, Compared

The gluten-free aisle is dominated by rice and a handful of newcomers, but two of the most interesting options are older than almost anything on the shelf. Sorghum and amaranth are both naturally gluten-free, both ancient, and genuinely different from each other.

Two grains, two personalities

Sorghum is a true cereal grass, the fifth most-produced grain in the world. It cooks up hearty and mild, works as a whole grain, a flour, or a tiny popped snack, and brings fiber and antioxidant polyphenols in its whole-grain form. It is the dependable, everyday staple.

Amaranth is not a true cereal at all but a pseudo-grain, a flower that is mostly seed. It cooks into something softer and porridge-like, and its headline feature is protein: it carries lysine, an amino acid most cereal grains lack, which makes its protein unusually complete.

Sorghum is the workhorse whole grain. Amaranth is the protein specialist. You want both in the pantry.

When to reach for each

  • For everyday grain-bowl duty, sorghum. It behaves like a hearty whole grain and holds its texture, closer to how you would use farro or barley, minus the gluten.
  • For a protein boost, amaranth. Stir it into porridge, use it to round out a grain blend, or add a spoonful to bump the amino-acid profile of a plant-based plate.
  • For a snack, both pop. Sorghum makes an adorable miniature popcorn; amaranth puffs into tiny crackling seeds, the base of the ancient candy we cover in alegria.

What they share

Beyond being gluten-free, they share a story. Both fed enormous populations for millennia and then slipped off the modern Western plate, not because they failed but because the aisle got narrow. That pattern is the whole subject of why your grocery store forgot these foods.

The verdict

Not rivals, teammates. Sorghum is your gluten-free workhorse grain; amaranth is your gluten-free protein specialist. Keep both, use them for different jobs, and enjoy the fact that the two most interesting grains in the gluten-free aisle are also two of the oldest.
